It has been a while since I’ve cared about my ability to have bread. I simply don’t miss it. I look back to the days where I’d enjoy the warm bread that was served for free at the dinner table when going out to eat, I am remember eating it and feeling even more hungry. There’s no nutritional value and now that bread and I have cut ties – I don’t miss it one bit.
My food lifestyle is mostly paleo. I say mostly because occasionally I drink alcohol and I love peanut butter. It’s very rare for me to eat anything that is processed or comes out of a box. If I eat something, I want it to keep my “full” and satiated, not hungry in just an hour later.
The covid19 pandemic has been quite the curveball. I have been filled with anxiety over food because I can’t eat just anything. I have pretty limited options as I’m sure some of you can relate. Mike and I went to a local natural food store to grab some allergy friendly things and I came across this goldmine!
Unbun

I found the Unbun in the freezer section. As usual, I picked it up to read the ingredients. I was completely blown away. Most “gluten-free” breads are filled with a bunch of garbage and the ingredient list is REALLY long. The Unbun has 9 ingredients. No gums. No preservatives. Which is why they have to be frozen.
They aren’t very big but they are really filling. They have a TON of fiber:
17g carbs-12g fiber=5 net carbs
Unbun ingredients taken straight from their website:
Water, Almond Flour, Egg White, Flax, Coconut Flour, Psyllium, Whole Egg, Apple Cider Vinegar, Paleo Baking Powder (Cream of Tartar, Salt, Sodium Bicarbonate).
They can be used for sandwiches, breakfast with eggs, or whatever you want! I definitely approve of these because they are filling and they don’t cause a blood sugar spike.

My breakfast this morning was loaded with nutrients. protein, healthy fats micronutrients and fiber. I just let one thaw out while I made my coffee then put it in the toaster oven to get it warm.
They do have tree nuts and egg in them but you can find a vegan version if you are staying away from animal products.
I absolutely love living a paleo lifestyle – and it’s certainly easy to avoid my food allergens too (gluten/dairy). As a paleo queen and a someone who is educated in nutrition I DEFINITELY approve of these.
