Fear not. This recipe is for you.
This will be my second post about pancakes. Am I obsessed with pancakes? Just a little.
This recipe is technically for a pancake, however, I feel like it’s more of a crepe. Both are equally good and what’s great is that this particular recipe is SO versatile!
Light, not fluffy
Because of the lack of baking soda or flour, these aren’t going to be your regular fluffy pancakes. There are only TWO ingredients in this recipe – however, there are some alterations/additions that you can make depending on your wants/needs.
Basic Recipe
2 – large eggs
1 – ripe banana (the more ripe the banana is the more brown it may become due to natural sugar content)
+ whatever toppings you so desire
That’s it. Seriously.
This is a pretty well known recipe so it’s difficult to give credit to any one person. I will, however, give you a couple of ideas on how to spice up this recipe “Crystal style.”
Possible recipe additions
1 tsp of ground cinnamon
1/2 cup of plain oats (can be gluten-free)
Pinch of Chocolate shavings
Pinch of Coconut flakes
Tip: I do not recommend adding additional liquid as it may cause the batter to become too runny. As a result, it will not cook properly. It should look like the photos below:
Toppings

1 tsp of cacao nibs
1 tsp of maca root powder
Other ideas:
Coconut flakes
Your favorite nut butter
Agave or honey
Pecans
Fruit
Nutella
